A Hidden Gem of Intimacy and Elegance: SkyWine Bar
Nestled discreetly in a corner of the highest floor on SKYVIEW Hotel Bangkok, you’ll find the intimate and inviting SkyWine Bar. This charming space offers a cosy ambience, complemented by floor-to-ceiling windows that provide breathtaking views. Empty wine bottles and flower vases line the restaurant’s window seats as part of their decorations.
SkyWine had an elegant and timeless interior, with quiet jazz music playing in the background. This restaurant slash bar seats up to 20 people and is a great fit for those who are looking to rent a space for private events. SkyWine Bar’s staff were friendly and professional, explaining every dish as they arrived.
Hotate Ponzu
Hotate Ponzu is a Japanese dish consisting of thinly sliced raw scallops, known as ‘hotate’ in Japanese, served together with a citrus-based sauce called ‘ponzu’. With each bite, the scallops provided a subtle sweetness that harmonised perfectly with the vibrant ponzu sauce. The wasabi’s subtle heat and piquancy also helped to balance any potential fishiness from the scallops, allowing their delicate flavours to shine through.
Japanese Oysters
The Japanese oysters served at SkyWine were extremely plump and had a meaty texture that was different from any other oysters I’ve previously tasted. There was a subtle acidity from the lime which brightened the taste profile and brought out the inherent sweetness of the seafood. Additionally, the hint of wasabi provided a delicate heat, accentuating the briny essence and adding a subtle depth to the overall flavour profile.
Picanha MB5+
Picanha is a popular cut of beef in Brazil, known as the top sirloin cap or rump cap in English. At SkyWine, they offer this specific cut at a marbling grade of 5+, indicating an impressive degree of marbling. It was my first time having this cut of steak and I loved it! Because of the intense marbling, the beef had a deliciously rich and buttery taste in every bite. The marbling within the beef provides moisture and imparts a melt-in-your-mouth sensation which is very rare to find even in some steakhouses. If you can only try one dish at SkyWine, this should be it!
Fish in White Wine Cream Sauce
The Fish in White Wine Cream Sauce combines the delicate flavours of fish with the richness of a creamy sauce infused with white wine, bringing a velvety and flavorful element to the fish. While the sauce adds a luxurious richness, the white wine contributes a subtle tang and depth to the overall taste profile. On the other hand, the fish fillet was well seasoned and had a flaky texture, contrasting well with the cream sauce and thus making the whole dish very tasty.
Fried River Prawn
The presentation of the Fried River Prawn was impeccable, with the prawn resting gracefully beside a mound of perfectly cooked rice. What caught my attention was the size of the prawn, which was impressive and hinted at its freshness. The rice acted as a canvas, absorbing the essence of the spicy broth and bringing a satisfying textural contrast to the crispy prawn. This combination of prawn, flavourful broth, and rice encapsulated the essence of Thai cuisine, delivering a mouthful of familiar and comforting Thai flavours.
Foie Gras with Pickled Cabbage Cream Sauce
Foie Gras with Pickled Cabbage Cream Sauce is a luxurious and sophisticated dish that combines the rich and delicate flavours of foie gras with the tangy and creamy essence of pickled cabbage cream sauce. Foie gras, renowned for its buttery and velvety texture, takes centre stage in this dish while the pickled cabbage cream sauce adds a refreshing element to the dish. The result is a melt-in-your-mouth experience that exudes pure indulgence!
Cocktails
I also got to try three different cocktails while I was at SkyWine. Namely, I tried their Bloody Mary, Blue Hawaii and White Chocolate Truffle. SkyWine Bar does something unique with their drinks whereby they add edible glitter to their mocktails, making the drink look super intriguing. The garnishes for each cocktail were different and added a little bit of flair to it. Taste wise, the drinks had a nice touch of alcohol to them but were also balanced out by the other syrups and additives. My personal favourite was the White Chocolate Truffle as I could clearly taste Bailey’s!
